Sweet Potato soup



2 tablespoons ((28g) butter
1 onion, diced
2 cloves of garlic, minced
1 cup (100g) celery, chopped
1 1/2 pounds (675g) sweet potatoes, peeled and cubed
1 apple, peeled, cored and chopped
1 inch (2,5cm) ginger, minced
3 cups (720ml) chicken broth or vegetable broth
1/2 cup (120ml) heavy cream
bacon, cooked and crumbled
one day old bread, cubed
chives for garnish

1. in a saucepan, melt the butter, add the onion and garlic and sauté

2. add celery, sweet potatoes, apple and ginger and cook for 5 minutes, stirring often. Season with salt and pepper to taste

3. add broth and simmer until potatoes are soft

4. pour in a blender and mix until smooth

5. return to saucepan, add cream and correct seasoning

6. fry bacon and in the same skillet add some chopped one day old bread to make the croutons 

7. arrange bacon and croutons on soup and sprinkle with chives
