Panko Prawn with 3 dips & sweet potato wedges

 



Prawns, peeled and deveined, tail left on
Tempura flour, seasoned with salt and pepper
Eggs, whisked
Panko breadcrumbs
 
Dredge praws
1. flour
2. eggs, whisked
3. panko breadcrumbs

Fry in batches in hot oil. Remember that prawns cook very fast! Depending on the size 2 to 4 minutes per side

Dips

Cocktail:

1 cup mayonnaise
2-3 tablespoons ketchup
dash of Tabasco
dash of Worcestershire sauce
sprinkle of lime juice
salt and pepper

Curry:

1/2 cup mayonnaise
1/2 cup crème fraiche or sour cream
small onion, minced
curry powder, 1-2 teaspoons
cayenne powder, 1/2 teaspoon
salt and pepper

Sweet Chili:

1/2 cup sweet Thai chili sauce
1/2 cup apricot jam

Sweet Potatoes

1. peel and cut sweet potatoes in wedges

2. in a bowl, toss potatoes with olive oil, salt and pepper

3. arrange in a lined baking sheet and bake at 375° for about 35 minutes
