Lemon Pound Cake
Cake
3 cups of flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 tablespoons lemon zest
2 tablespoons lemon juice
1 cup softened butter
2 1/4 cups sugar, plus more for the pan
3 large eggs
Syrup
1/4 cup water
1/4 cup lemon juice
1 1/2 tablespoons sugar
Glaze
1 cup confectioners sugar
2 tablespoons lemon juice
1. mix flour, baking soda and salt. Set aside
2. whisk together buttermilk, lemon zest and juice
3. mix butter and sugar until smooth
4. add eggs one a time until well combined
5. add flour mixture, and buttermilk mixture alternately to the butter mixture
6. coat a cake pan with butter, top with sugar and add the cake mixture
7. bake at 325°F for 45-50 minutes, or until cake is golden and a tester comes out clean
Meanwhile prepare the syrup
1. combine water and sugar and bring to a boil. Remove from heat and stir lemon juice in
2. brush the syrup over the cake after cooling it for 10 minutes
3. let cake cool completely before glazing it!
Glaze
Combine sifted sugar with lemon juice. Adjust sugar and/or lemon juice to make a thick but pourable consistency like honey or molasses
Spoon glaze over cake and let it drip down the sides
