Asparagus, pea and mint soup




2 tablespoons(30g) butter
2 cups (100g) onion, diced
1/2 cup (63g) celery, diced
2 garlic cloves, sliced
3 cups (375g)  fresh asparagus, cut in pieces
2 cups (480ml) chicken broth or vegetable broth
1 cup (152g) frozen peas
10 mint leaves
1/4 cup (60g) sour creme or créme fraiche
salt and pepper to taste

1. melt the butter and add onions, celery and garlic. Cook vegetables until tender

2. add asparagus and broth, season with salt and pepper and cover to simmer 20 minutes

3. add the peas and cook 5 more minutes

4. pour soup into a blender, add the mint leaves. Blend until smooth

5. return soup to pot, add the créme fraiche and warm through
