Panna Cotta with Berries

 


2 tablespoons water
2. teaspoons gelatin
1 cup whipping cream
1 teaspoon lemon zest
1/2 cup sugar
2 cups buttermilk
2 teaspoons vanilla extract
Assorted frozen berries, thawed and sweetened to taste

1. mix water and gelation and let stand for 5 minutes

2. heat cream, lemon peel and sugar, stirring until sugar dissolves. Bring to a boil, remove from heat and add gelatin, stirring until it dissolves.

3. cool mixture, add buttermilk and vanilla, pour into ramekins and let cool for 4 hours or more

4. garnish with sweetened berries before serving
