Key Lime Pie
Crust
1 1/2 cups finely crumbled graham crackers, or crackers of your choice
1/3 cup light brown sugar (omit if using sweetened crackers)
4 tablespoons butter
1. combine all ingredients and cover the bottom and sides of a pie mold, pressing firmly with fingers and bottom of a glass
2. bake for 10 minutes at 375°
Pie
2 14-oz cans of sweetened condensed milk
1 cup plain greek yoghurt
1 tablespoon grated lime zest
3/4 cup lime juice
1. mix all ingredients well, and pour into the warm pie crust
2. bake at 350° for 15 minutes, until almost set. Filling should still be a little wobbly
3. let cool and refrigerate for at least 3 hours
Topping
1 cup heavy cream
2 tablespoons confectioners sugar
1 teaspoon grated lime zest to garnish
1. mix heavy cream until it forms soft peaks
2. add sugar and continue beating until peaks are stiff
3. top pie with cream, sprinkle with lime zest
