Fudgy Brownies
4 ounces semi-sweet chocolate
12 ounces bittersweet chocolate
1 tablespoon vanilla extract
1/2 teaspoon instant coffee
1 cup unsalted butter
4 eggs
1 cup sugar
3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1. melt chocolate and butter in a saucepan on low. Add vanilla and coffee, stir to combine and let cool slightly
2. beat eggs and sugar together until smooth and add to chocolate mixture
3. add flour, salt and baking soda and beat until smooth
4. pour mixture into a 11 x 16 inch pan, lined with parchment paper, smooth with a spatula and bake at 375° for 10 minutes
5. let brownies cool for 30 minutes to an hour (they will be very soft!) Place in refrigerator to let them set.
