Homemade brown bread






4 cups of brown flour
1 package active dry yeast
2 teaspoons malt extract
2 teaspoons salt
1 1/2 cups lukewarm water 

1. combine all ingredients and mix well until smooth and elastic. Add more flour/water if needed

2. knead dough to a ball, place in a bowl, cover with damp kitchen towel and let rest and dough doubles in size (about 1 hour)

3.  punch dough down on a floured surface and form to a loaf

4. place on a lined baking sheet, brush with water and let rise for 30 to 50 minutes 

5. cut top of dough in 1 inch deep slits crosswise and sprinkle with flour

6. bake on lower part of oven at 400°F for 10 minutes, lower temperature to 360° and continue baking for 30 to 40 minutes 

7. when slightly cooled, turn bread over and tap flour off
