Marinated Feta Cheese

 

1 pound feta cheese, cut in 1" pieces
6 garlic cloves
2 rosemary sprigs
1 thyme sprig
1/2 tablespoon mixed peppercorns
2 bay leaves
1/2 cup olives
1 or more chili peppers 
olive oil

1. Place all ingredients in a well washed and dried glass jar, and fill with olive oil until all is covered.

2. Seal jar and let stand in refrigerator for 2-3 days before serving.  Cheese will keep in refrigerator for 3-4 weeks

Serve with bread, on a salad, or simply on its own!
