Classic Herbed Meatlof
2 pounds pork & beef ground meat
1 medium onion, finely chopped
4 garlic cloves, minced
3 tablespoons ketchup
2 teaspoons Worcestershire sauce
3/4 cup Panko breadcrumbs
1/3 cup milk
2 large eggs
3 tablespoons fresh parsley, finely chopped
1 tablespoon dry italian herbs
1 teaspoon cumin powder
3 teaspoons paprika powder
3-4 teaspoons salt
freshly ground pepper to taste
Glaze
3/4 cup ketchup
1 1/2 teaspoons white vinegar
2 1/2 tablespoons brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon salt
1. mix all ingredients for the meatloaf. Add meat to a loaf pan, pressing down gently, and shaping evenly. Bake at 375°F for 40 minutes
2. combine all ingredients for the glaze, and spread over meatloaf. Return to oven and bake an additional 20 minutes. Rest meatloaf for 10 minutes before cutting. Sprinkle with additional parsley if desired
