Homemade Granola

 

3 cups rolled oats
1 cup of for example chopped pecans, slivered almonds, coconut flakes, pumpkin seeds
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup coconut oil
1/2 cup maple syrup
1 teaspoon vanilla extract 
1 cup dried fruit, like cranberries, raisins, etc

1. preheat oven to 350°. Mix oats, nuts, seeds, salt, and cinnamon

2. heat oil, syrup and vanilla extract together, and pour over oat mix. Mix well until mixture is completely covered 

3. pour granola onto sheet pan covered mit parchment paper. Press down firmly with spatula to an even layer. Sheet pan should be a little crowded

4. bake for 25 minutes, stirring mixture once during baking, and pressing down granola with spatula after stirring. Granola should look toasted. Be careful not to burn it. It will still be wet when coming out of oven

5. let cool for at least 45 minutes. Break up in pieces, and mix in dried fruit.

Keep stored in an airtight container
