Lime Yogurt Mousse

 

1 1/2 teaspoons gelatin powder
2 tablespoons water
6 tablespoons fresh lime juice
1/2 cup sugar
1 cup greek yogurt
1 cup heavy cream

1. in a small bowl, sprinkle gelatin over water. Let stand for 5 minutes

2. combine lime juice and sugar in a saucepan, and simmer until sugar has dissolved. Remove from heat, and whisk in gelatin until melted. Let cool

3. whisk in yogurt, and fold in whipped cream

4. pour in one bowl, or in ramekins. Chill overnight
