Marbled Gugelhupf
250 grams butter, room temperature
250 grams sugar
1 1/2 teaspoons vanilla extract
1 tablespoon rum
4 eggs, separated, and at room temperature
350 grams flour
80 grams ground hazelnuts
1 tablespoon baking powder
1 cup milk
3 tablespoons cocoa powder
1. mix butter and sugar together until light and fluffy. Add vanilla extract, and rum, mix well. Add egg yolks one at a time
2. mix flour, baking powder and hazelnuts. Add to mixture, alternating with milk
3. whisk egg whites until stiff, and fold in
4. divide cake mixture in half. Mix cocoa powder in one half
5. pour mixture without cocoa powder onto bottom of a well greased, and floured gugelhupf cake form, and top with cocoa powder mixture. Run through cake mixture with a fork or knife in curves to slightly mix both
6. bake at 350° for 60 minutes
Chocolate Glaze
160 grams semisweet chocolate
120 grams butter
1 tablespoon heavy cream
Melt all ingredients in double boiler, and drizzle over cake
