Salmon & Potato Roast with Dijon Herb Butter
Potatoes, halved or quartered
Salmon Filets, skin on
Olive oil
1/2 cup butter
1 tablespoon Dijon Mustard
Mixed fresh herbs of choice
Coarse Sea Salt & Pepper
1. mix butter, mustard and herbs. Season with salt & pepper. Set aside
2. toss potatoes in olive oil. Place in a roasting pan, and sprinkle with salt & pepper. Bake at 400° for 20-25 minutes
3. season salmon with salt & pepper on both sides. Move potatoes to sides of roasting pan, place salmon skin down in middle of pan, brush with olive oil, and bake for 12-15 minutes. Salmon should flake easily
4. brush salmon and potatoes with herb butter while still hot
