Cinque Pi Sauce

2 cups heavy cream
1 garlic clove, minced
3 tablespoons tomato paste
1 cup freshly grated parmesan cheese
freshly grated pepper
dash of fresh nutmeg
1/4 cup parsley, chopped
salt to taste

1. heat heavy cream and garlic over low to medium heat for about 5 minutes

2. whisk in tomato paste, and cook for another couple of minutes

3. add rest of ingredients, whisking until cheese melts and is well incorporated 

Pairs very well with ricotta & spinach tortellinis
