Lime & Olive Oil Loaf Cake

 

Cake
Zest of 4 limes
3/4 cup sugar
1/2 cup olive oil
2 large eggs, room temperature 
1/2 teaspoon almond extract
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon sea salt
1 cup milk, room temperature

1. in a bowl of an electric mixer, mix lime zest and sugar very well.

2. slowly stream in olive oil until completely blended with sugar. Add eggs one at a time. Add almond extract

3. mix flour, baking powder. baking soda, and salt, and add to mixture alternating with milk.

4. pour mixture into a well greased loaf pan. Tap on working surface to get rid of all bubbles, and let rest for 15 to 30 minutes. Bake at 350° for about 40 minutes

Lime Soak
1/4 cup lime juice
1/4 cup sugar

1. combine in a saucepan and stir until sugar has dissolved

2. after cake has cooled (keep in pan), poke top and brush with mixture. Let sit until completely soaked in

Lime Glaze
1 cup powdered sugar
1/4 cup heavy cream
2 tablespoons lime juice

1. mix all together, adding more powdered sugar if glaze seems too runny

2. pour over lime loaf
