Maple Syrup Cake
1/2 cup butter, room temperature
2 eggs, room temperature
1/4 cup brown sugar
1 cup maple syrup
2 1/2 cups flour
1 tablespoon baking powder
1 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon salt
1/2 cup crème fraîche
1. beat butter and sugar until light and fluffy
2. add eggs one at a time, follow by maple syrup and mix well
3. mix together all dry ingredients, add to the butter/maple syrup mixture alternating with crème fraîche until all ingredients are well incorporated
4. bake at 350° for 35 minutes
Icing
1/4 cup maple syrup
2 tablespoons butter
1 cup icing sugar, sifted
1/8 teaspoon ground ginger
1. melt butter, and add maple syrup
2. remove from heat, and whisk in sugar and ginger. Adjust sugar and/or maple syrup depending on how stiff you prefer the icing
