Green Seasoning Baked Cod

 

1 big onion, thinly sliced
1/4 cup (60ml) olive oil
1/2 tablespoon lime zest
kosher salt
freshly ground pepper
4-6 cod loins or fillets, skinless, boneless

1. place onions on bottom of a baking dish

2. sprinkle fish with salt & pepper on both sides, and place on top of onions

3. drizzle with olive oil, sprinkle with lime zest, and set aside

Green Seasoning
4 garlic cloves, thinly sliced
1 2" (5cm) piece of fresh ginger, peeled, and finely chopped
4 thyme sprigs, leaves picked
1 bunch of cilantro, roughly chopped
2-4 scallions, sliced in rounds
1 red bell pepper, deveined and chopped
1 habanero chile, seeds discarded, and chopped

1. mix all together, and sprinkle over fish

2. drizzle with olive oil, and bake at 350°F (180°C) for 20 to 25 minutes, or until fish flakes easily 

Serve with brown rice
