Vegetable Arrabbiata Sauce
1 big onion
4 scallions
1 red bell pepper
6 garlic cloves
2 celery sprigs
2 carrots
1 bonnet chili (Arrabiata sauce is a very spicy sauce, but choose chili depending on how hot you prefer sauce)
1. place all in a food processor and pulse to chop finely
2. heat 3 tablespoons olive oil and sauté
3. add
2 cans chopped tomatoes
2 tablespoons tomato purée
2 cups vegetable broth
1 bay leaf
1 teaspoon thyme
1 tablespoon oregano
1 tablespoon brown sugar
salt and pepper to taste
1/4 cup fresh basil, chopped
1/2 cup fresh parsley, chopped
4. cook on low heat for 1 1/2 hours or more. Don't worry if sauce seems dry. Pasta water will be added at the end
5. add chopped fresh basil and parsley at the end of cooking time
6. cook pasta, reserve 1-2 cups of cooking water and pour on sauce.
