Lobster Pasta
2 lobster tails of about 1 pound
1. boil covered in a large pot filled with 1-2 inches of salted water for 8-10 minutes. depending on size
2. cut tails in half with kitchen scissor, remove flesh and cut in bite sizes
Sauce
2 tablespoons olive oil
1 large onion, chopped
2 carrots, chopped
3 garlic cloves, chopped
2 teaspoons chili flakes, or 1 fresh chili finely chopped
2 teaspoons capers
2 anchovy filets
1 tablespoon tomato paste
1 can San Marzano tomatoes
1/2 cup dry white wine
1-2 cups fish stock
1 tablespoon brown sugar
1. heat olive oil. Sauté onions, garlic, chili flakes and carrots for 5 minutes. Add tomato paste and mix well
2. Add rest of ingredients, bring to a boil, reduce heat and simmer for 30 minutes
3. pour in a blender and process until very smooth. Return to pot
4. season with salt and freshly grated pepper, or coarse pepper
Lobster
2-3 tablespoons olive oil
4 garlic cloves, chopped
1/2 cup fresh parsley, chopped
2 tablespoons cold butter
1. heat olive oil in a skillet and sauté the garlic. Add lobster, mix well and finally add parsley and cook for 1 minute
2. mix lobster and sauce, add butter and warm through
Serve over buttered pasta
