Blueberry Crumb Cake

 


1/2 cup butter, at room temperature
3/4 cup sugar 
2 eggs, at room temperature
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 cups fresh blueberries

Topping

1 cup flour
1/4 cup sugar
1 teaspoon cinnamon
1/3 cup very cold butter

1. beat the butter and sugar together until light and fluffy. Add the eggs one at a time and finally the vanilla extract

2. mix the flour, baking powder and salt

3. add the flour mixture and milk slowly, alternating between each

4. fold in blueberries

5. pour into a greased pan and set aside

6. mix, sugar, flour and cinnamon. Cut in cold butter and mix with your fingers until crumbs form

7. sprinkle crumbs over blueberry batter and bake for 40-45 minutes at 350°

- Serve with whipped cream or vanilla ice cream if desired
