Smoked Salmon Pasta Sauce
1/2 pound smoked salmon, roughly cut.
1 big leek, thinly sliced
2 tablespoons butter
1/2 cup dry white wine
1 cup heavy cream
3 tablespoons freshly grated parmesan cheese
coarse mixed pepper
1. melt butter, add leeks and sauté. Add salmon and cook for 1-2 minutes
2. pour in wine, and cook on low for another 2 minutes
3. add cream, bring to a boil, lower heat to low, add parmesan
4. serve over pasta, and sprinkle with coarse pepper
