Plum Torte

 


3/4 cup (148g) sugar
1/2 cup (113g) butter
1 teaspoon vanilla extract
1  cup (120g)flour sifted
1 teaspoon baking powder
1 pinch of salt
2 eggs
6-10 plums, halved
brown sugar, cinnamon and lemon juice, for topping

1. whisk butter and sugar until light and fluffy. Add vanilla extract and continue whisking

2. add flour, baking powder salt and eggs and beat well

3. pour batter into a springform pan, and top with plum halves, skin side up

4. sprinkle with sugar, cinnamon and lemon juice

5. bake for 1 hour at 350°F (180°C)

Serve plain or with whipped cream

Substitute plums for any other fruit
