Shrimp Burger
2 pounds shrimp, shelled, deveined, uncooked
3-4 garlic cloves
3 shallots
1/4 cup scallions
1-2 inches piece ginger
1 red bell pepper
1/2 cup coriander
2 tablespoons fish sauce
1-2 tablespoons hot pepper sauce of choice
salt
panko breadcrumbs
lemon wedges for serving
1. finely grate panko breadcrumbs in a food processor and set aside
2. place garlic, shallots, scallions, ginger, bell pepper and coriander in a food processor and chop roughly pulsing the machine. Set aside
3. place 3/4 of shrimp in food processor and purée into a paste. Add rest of shrimp and roughly chop pulsing (the bigger pieces of shrimp will give the patties a nice consistency)
4. mix shrimp and vegetable/herb mixture. Add fish sauce, hot pepper sauce and salt. Place in refrigerator for 30 minutes or more for flavors to infuse and to make the mixture more manageable
5. shape shrimp mixture into equal sized balls, cover with panko breadcrumbs and flatten to a burger patty. Place on wax paper or any non stick surface. Refrigerate once again
6. fry in vegetable oil for about 4 minutes on each side.
Serve with lemon wedges
Note
No extra binding ingredients are necessary. The shrimp paste is sticky enough to hold the patty together
