Pumpkin Maple Muffins
1/2 cup butter
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons kosher salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/4 teaspoon nutmeg
1 1/2 cups pumpkin purée
3 large eggs
1 cup brown sugar
2/3 cup maple syrup
1. heat butter on a small skillet and cook, stirring constantly, until butter bubbles and starts to turn brown (about 5 minutes) Remove from heat and set aside
2. mix flour, baking powder, baking soda, salt, cinnamon, ginger, turmeric and nutmeg together. Set aside
3. whisk pumpkin, eggs, brown sugar and maple syrup together until smooth. Add dry ingredients, followed by browned butter
4. pour batter into paper lined muffin molds and bake at 350° for 20-25 minutes
