Lemon Chicken with Orzo & Roasted Broccoli

 


4 chicken breasts or thighs, skin-on if preferred
2 tablespoons olive oil
2 tablespoons butter
1 lemon, thinly sliced seeds removed
4 cups broccoli, cut in florets
8 ounces dried orzo
2 tablespoons fresh thyme 
4 garlic cloves
1/2 cup dry white wine
1-2 cups chicken broth

1. season chicken pieces with salt and pepper 

2. in a large, heavy-bottomed skillet, heat olive oil. Brown chicken pieces on both sides. Set aside. Chicken will finish cooking later

3. lower heat, melt butter and add lemon slices. Cook until they release juices and are browned. Transfer to plate with chicken

4. add garlic, orzo and thyme, and cook stirring constantly for about 1 minute. Deglaze with wine and cook for 1-2 minutes.

5. add broth, chicken pieces and lemon slices. Cover and cook on low for 15 minutes

6. in the meantime, cover broccoli with olive oil, season with salt, and roast for 15 minutes at 200° on a with parchment paper lined baking tray

7. combine broccoli florets with lemon chicken orzo mix
