Indian Spiced Beef Stew
2 pounds beef, cubed
1 big onion, chopped
3 garlic cloves, minced
1/2 cup crushed tomatoes
1 teaspoon turmeric
1 tablespoon garam masala
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon kashmiri chili powder
1/2 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon lemon zest
1 tablespoon brown sugar
1 cup beef stock
1/4 cup coriander, chopped
2 tablespoons oil
1. heat the oil and cook onions until translucent. Add garlic and spices and sauté.
2. stir in tomatoes and sugar and bring to a boil. Remove from heat, pour into food processor and blend into a paste
3. brown meat on all sides, pour in spice paste, stock and lemon zest. Cook for 1 hour or until meat is very tender. Mix in coriander at the end of cooking time
