Roasted Cauliflower Rice

 

3 cups (400g) cauliflower, pulsed in batches in a food processor till grainy
1/2 teaspoon garlic salt powder
1/4 teaspoon salt
pepper to taste
2 tablespoons (30ml) olive oil
1-2 scallions, thinly sliced
1/4 cup coriander leaves (optional)
1/2 cup edamame (optional)


1. combine cauliflower with garlic salt, salt & pepper, olive oil and scallions until very well combined

2. brush a baking pan with olive oil lightly. Spread the cauliflower mix evenly. Bake at 450°F/230°C on lower section of oven for 10 minutes. Using a spatula, mix the cauliflower, return to oven and bake for another 10 minutes. Incorporate coriander and edamame if using, and bake for another 6-8 minutes
