Friands
1 1/2 sticks (160g) butter, melted
2/3 cup (100g) flour
1 2/3 cups (250g) powdered sugar
1 cup (125g) ground almonds
6 egg whites
1 teaspoon vanilla extract
raspberries, fresh or frozen
1. sift flour and sugar into a bowl. Mix in ground almonds
2. whisk egg whites until very stiff and frothy. Gently fold into flour mixture
3. add melted butter and vanilla extract. Carefully stir everything together
4. lightly butter molds and fill with batter 2/3 full. Place 2-3 raspberries in each mold.
5. Bake at 355°F (180°C) for 20-25 minutes
6. cool and sprinkle with powdered sugar
Alternative: Add zest of 1 lemon to batter. Instead of raspberries, make some icing out of powdered sugar and lemon juice. Spread over friands
