Gluten Free Fudgy Brownies

 

3/4 cup (170g) butter, melted
1 cup (200g) sugar
1/2 cup (90g) soft brown sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup (40g) cocoa powder
1/2 cup (70g) gluten free plain flour (ideally one that can be swapped 1:1 for regular flour)
1/2 cup (80g) semi sweet chocolate chips

1. preheat oven to 350°F (180°C). Line a 9"x9" (23x23cm) pan with parchment paper

2. whisk melted butter, sugars and vanilla extract together until smooth

3. add eggs one at a time stirring in between. Sift in cocoa powder and flour. Stir until just combined. Add chocolate chips and mix

4. pour brownie batter into pan and bake brownies for 30-35 minutes. Cool completely before cutting
