Strawberry Mousse
3 cups strawberries (1 1/2 cups puree)
1/2 cup (100g) sugar
1 pack (7g) unflavored gelatin powder
1/4 cup (60ml) cold water
1 cup (250ml) heavy cream
1 teaspoon vanilla extract
1. puree strawberries in a blender and then strain through a sieve. You should have 1 1/2 cups of strawberry puree
2. mix gelatin and water and let stand
3. mix puree and sugar in a saucepan and cook on low until slightly thickened. Remove from heat, add gelatin and whisk until dissolved. Allow to cool completely
4. mix cooled puree with a hand mixer, add heavy cream and vanilla extract, and continue mixing for about 5 minutes until thick and fluffy
5. divide in dessert cups and refrigerate until completely set
