Thai Green Curry Shrimp

 

2 tablespoons oil
2 tablespoons green curry paste
1 cup water
1 pound jumbo shrimp, shelled and deveined
1/2 cup coconut milk
1 tablespoon fish sauce
1 tablespoon palm sugar or brown sugar
1 zucchini, cut in halved slices
1/2 red bell pepper, cut in strips
2 tablespoons coriander leaves
lime for serving

1. heat oil in a saucepan, add curry paste and cook just for 1 second

2. add water, coconut milk, fish sauce and sugar. Bring to a boil, turn heat down, and add shrimp. Cook for 1 minute. Add vegetables and cook for 1 more minute. Remove from heat and sprinkle with coriander

Serve with lime wedges and jasmin rice
