Chicken Fajitas

 

3 chicken breasts, skinless and boneless
1 onion, sliced
3 bell peppers, red, green & yellow, sliced
coriander leaves
olive oil

Seasoning
1/2 tablespoon chili powder
1/2 tablespoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon paprika powder
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper

For serving
tortillas
grated cheese
sour cream
pico de gallo (see my recipe)
avocado slices
lime wedges

1. pound chicken breasts to flatten. Generously sprinkle chicken with seasoning mix and press down with fingers. Heat oil in a large skillet, and sear chicken for 7-8 minutes per side

2. remove chicken from skillet. Add a little more olive oil, and cook onion slices 1-2 minutes. Add bell pepper and continue cooking stirring frequently. Mix in coriander leaves

3. cut chicken in slices

Assembling

1. place some paprika onion mix on one side of a tortilla. Top with slices of chicken. Sprinkle some lime juice on chicken. Top with with cheese, and fold tortilla. Brush with olive oil and bake at 350° until warmed through and crispy outside

Serve with pico de gallo, sour cream and avocado slices
