Baked Corn

 

3 tablespoons (42g) butter
3 tablespoons (22,5g) flour
1 1/2 cups (360ml) half & half
1 cup (113g) shredded cheddar cheese
1 teaspoon mustard powder
2 1/2 cups (410g) corn
3 eggs
salt & pepper
dash paprika powder

1. melt butter in a saucepan. Add flour and whisk continuously for 1 minute

2. pour in half & half and whisk until thickened. Mix in cheese and mustard powder. Season with salt & pepper. Remove from stove. Mix in corn

3. whisk eggs and add slowly add to the corn mixture. Pour into an oven safe casserole and sprinkle with paprika powder

4. place casserole in a baking pan or similar filled with hot water, and bake at 350°F (180°C) for 50 minutes or until set
