Homemade Doughnuts
1 cup (240ml) whole milk, warmed to 110°F (43°C)
2 1/4 teaspoons (7g) instant yeast
1/3 cup (65g) sugar, divided
2 large eggs
6 tablespoons (85g) butter, melted & cooled
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/2 teaspoon salt
4 cups (500g) flour, plus more if needed
1. whisk milk. yeast and 1 tablespoon of sugar in the bowl of a stand mixer. Cover and allow to rest for 8-10 minutes until foamy
2. add rest of sugar, eggs, butter, vanilla, nutmeg, salt and about half of the flour. Beat on low for 1-2 minutes. Scrape sides with a spatula and add rest of flour. Mix on medium speed until dough is well mixed and pulls away from the sides of the bowl. Add 1 tablespoon flour at a time if dough is too sticky. Beat for 5-7 minutes. The dough should be slightly sticky, smooth and elastic
3. lightly grease a bowl with vegetable oil. Place the dough in the bowl turning it to cover it with the oil. Cover and allow to rise for 1-2 hours or until doubled in size
4. punch the risen dough down and turn it onto a slightly floured surface. Roll out to 1/2" (1,3cm) thickness. Use a 3-3,5" (8-9cm) doughnut cutter to cut the doughnuts. Place them on a lined baking sheet. Cover loosely and allow to rest for 30 minutes
5. heat 1-2 quarts (946ml-1,9l) vegetable oil in a dutch oven to 375°F (190°C). Add 2-3 doughnuts at a time to the oil and cook 1 minute on each side. Remove with a slotted spoon (the best tool for this is a big, round, flat slotted spoon) and place on a rack to cool
Frosting
Vanilla
3 tablespoons (43g) melted butter
1 1/2 cups (180g) confectioners sugar
1 teaspoon vanilla extract
3 tablespoons (45ml) milk
1/8 teaspoon salt
1. mix all ingredients together. Dip one side of the doughnut into the frosting. Return to rack
Chocolate
3/4 cup (135g) chocolate chips
3 tablespoons (43g) butter
1 tablespoon light corn syrup
1 tablespoon water
2. place all ingredients in a saucepan. Whisk until chocolate has dissolved and the mixture is smooth and glossy. Cool a little before dipping in doughnuts
Doughnuts are best the same day they are made!
