Almond Granola
3 cups (255g) whole rolled oats
3/4 cup (75g) almond flour or meal
1/2 teaspoon salt
3/4 cup (95g) slivered unsalted almonds
1/3 cup (70g) coconut oil
1/3 cup (67g) packed light brown sugar
1/3 cup (80ml) maple syrup
1 teaspoon vanilla extract
1. preheat oven to 300°F (149°C). Line a 9" (23cm) x 13" (33cm) baking sheet with parchment paper
2. mix oats, almond flour, salt and almonds. Set aside
3. combine coconut oil, brown sugar and maple syrup in a saucepan. Whisk until sugar dissolves. Remove from heat and add vanilla extract. Pour over oat mixture and mix well
4. pour into prepared baking sheet and press down tightly into an even layer
5. bake 40 minutes, rotating the pan after 20 minutes. Remove baking pan, cool for 10 minutes. Cut in squares and then break up into smaller pieces
6. return pan to oven and bake for 10 more minutes
Mix Granola with dried fruits of your liking or fresh fruits if desired
