Crustless Quiche
6 slices of bacon, cut in small pieces
1 medium sweet onion, thinly sliced
3/4 cup (72g) cheese such as Gruyère, Emmentaler or Cheddar
6 eggs
2/3 cup (160ml) whole milk
1/3 cup (80ml) heavy cream
1/2 teaspoon salt
grated nutmeg
pepper to taste
1 tablespoon parsley
1. in a frying pan, cook the bacon halfway. Add the onion slices and continue cooking until the bacon is crispy and the onions translucent. Cool
2. whisk eggs, milk, cream, salt, nutmeg and pepper together until very well mixed
3. butter a 9" (22cm) pie dish. Place cooled bacon and onion on the bottom. Top with cheese. Pour in egg mixture
4. bake at 350°F (180°C) for 35 minutes
