Garlic Bread
Bread
3 cups (500g) baguette flour
1 envelope (7g) instant yeast
2 teaspoons salt
1 teaspoon sugar
1 1/2 cups (350ml) warm water
1. combine flour, salt and sugar in the bowl of a stand mixer fitted with a dough hook. With the machine on medium low, gradually add water. Mix for 3-5 minutes or until dough has come together and is soft
2. place dough in a bowl previously covered with olive oil. Cover with plastic wrap and place in a warm place like the oven or microwave. Allow to rise for 2 hours
3. using a dough scraper, drop dough on a well floured surface. Using your hands, flatten into a rectangle. Fold dough in half, and then flatten. Repeat about 8 times
4. divide dough in two. Work each half into a rectangle, and then roll dough into a typical baguette shape making sure to pinch the seam well with your fingers to prevent from opening up. Place in a baguette baking pan seam side down. Cover with a kitchen towel, place again in a warm space and allow to rise for 30 minutes
5. using a small serrated knife, make 3-4 cuts on surface of bread. Place baking tray in the middle of a at 420°F (220°C) heated oven with a water filled baking tray on the lowest part to prevent bread from drying out
6. bake for 10 minutes, reduce temperature to 400°F (200°), take out pan with water and continue baking for another 15 minutes or until nice and brown
Cool bread completely before spreading with garlic butter.
Garlic Butter
2 sticks (226g) butter, room temperature
4-6 cloves garlic, minced
1/2-1 teaspoon salt
flat leaf parsley to taste
1. mix all together. Refrigerate for flavors to infuse
2. using a bread knife, either cut slits in bread, or cut open in two halves. Spread butter garlic generously. Bake at 375° for 10-15 minutes
