Mini Cheesecakes


Butter and line 6 cocottes or ramekins with parchment paper
Preheat oven to 350°F/175°C

Crust
2/3 cups (80g) graham cracker crumbs
1/4 cup (56g) butter, melted
1 tablespoon sugar

1. mix all ingredients well, divide into 6 cocottes and press down firmly with the flat bottom of a glass or similar

2. bake for 6-8 minutes. Remove from oven

Filling
12 ounces (340g) cream cheese, room temperature
3/8 cup (75g) sugar
1 tablespoon flour
1 large egg, room temperature 
1/4 cup heavy cream
1 teaspoon vanilla extract

1. beat cream cheese until soft and fluffy. Mix in sugar and flour. Follow with egg, cream and vanilla extract. Do not overbeat

2. divide cream cheese mixture between the 6 prepared cocottes. Bake for 20-25 minutes. Middle of cheesecakes should still be jiggly. It will firm up while cooling

Tastes great served with fruits or fruit sauce!
