Apple Turnovers
2 cups small diced apples (2-3 apples)
2 tablespoons(30g) butter
2 tablespoons (30g) light brown sugar
1 teaspoon homemade apple pie spice (recipe follows)
2 tablespoons raisins
1-2 teaspoons lime juice
ready-made puff pastry sheets (enough for 4 squares of aprox. 6")
egg wash made of 1 egg + 1 tablespoon water
1. in a pan, melt the butter and add the diced apples. Cook for 2 minutes. Add rest of ingredients and continue cooking until apples are soft and syrup thick
Allow to cool completely before filling
2. divide filling in 4. Place filling in middle of each square. Brush egg wash along 2 edges of dough. Fold over and press the edges together. Use a fork to crimp edges
3. place turnovers on a lined baking sheet. Brush with egg wash, and cut a small slit into top of turnovers
4. bake at 400°F (200°C) for 20 minutes or until puffed and golden brown
Icing
2/3 cup (65g) powdered sugar
1 tablespoon (15ml) milk
1/4 teaspoon vanilla extract
1 teaspoon lemon juice
1. mix all ingredients together adding more powdered sugar if icing should be too thin in consistency
2. drizzle over cooled turnovers
Apple Pie Spice Powder
4 tablespoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1/2 teaspoon ground allspice
1 teaspoon ground ginger
1 1/2 teaspoons ground cardamon
1. mix all ingredients together. Keep in an airtight container
