Apple Cider Cake


2 cups (250g) all purpose flour
1 cup (125g) whole wheat flour
1 1/2 teaspoons(6g) baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
3/4 teaspoon salt
1 3/4 cups (350g) natural cane sugar
1 cup (240ml) apple cider
3/4 cup (187g) unsweetened applesauce
3/4 cup (180ml) olive oil
2 teaspoons vanilla extract
3 large eggs, room temperature

Topping
2 tablespoons(30g) butter, melted
cinnamon powder & sugar, mixed

1. butter and flour a bundt cake pan. Mix flours, baking powder, baking soda, cinnamon and salt. Set aside

2. whisk together cane sugar, apple cider, applesauce, olive oil, vanilla extract and eggs. When well combined, add flour mixture and whisk ingredients together

3. transfer batter to prepared bundt cake, and bake at 350°F (180°) for 45-50 minutes

4. cool cake for 45 minutes, and then invert onto rack. Brush with melted butter, then sprinkle liberally with cinnamon sugar
