Strawberry Panna Cotta
3/4 cup (180ml) milk
3/4 cup (180ml) heavy cream
3 tablespoons (36g) sugar
1 1/2 teaspoons (5g) gelatin powder
8 ounces (230g) strawberries
2 teaspoons (10g) sugar
3 tablespoons (45ml) water
1. add strawberries, sugar and water to a blender and blend until pureed. Set aside
2. place milk, cream and sugar in a saucepan. Simmer until sugar dissolves. Cool slightly, and add gelatin powder
3. add strawberry puree, stir to combine, and strain through a fine mesh sieve
4. pour mixture into glasses or ramekins, and refrigerate at least 4 hours
Garnish
strawberries, diced
2 tablespoons basil, finely chopped
sugar to taste
1-2 teaspoons balsamic vinegar
