Focaccia

 

1 2/3 cup bread flour
4 teaspoons sugar
1 1/4 teaspoon salt
1 teaspoon instant yeast
3/4 cup warm water
1 1/2 tablespoons olive oil
1/2 cup boiled and mashed potato
sea salt flakes

Garlic Rosemary Topping
5 garlic cloves, cut in fine slices
3/4 cup olive oil
rosemary leaves, fresh or dry

1. mix dry ingredients. Add water and olive oil, and with the help of a spatula mix. It will form a sticky dough

2. add mashed potatoes and incorporate to the dough by smearing along the walls of the bowl with a spatula. Shape dough to a ball, cover with plastic wrap and let rise for 30 minutes

3. grease another bowl with olive oil, and dump the dough in. Fold sides in about 6 times. Shape into a ball, cover and let rise another 30 minutes

4. prepare garlic topping. Place garlic and olive oil in a saucepan and let cook on low heat for about 10 minutes. Strain

5. grease a dutch oven, or baking pan generously with olive oil. Spread dough out in dutch oven or pan using your hands. Cover and let rise for a third and last time for 40 minutes
Preheat oven to 430° and set a rack in the middle of oven

6. remove plastic wrap. Drizzle top with garlic olive oil, and poke all your fingers into the dough to create dimples

7. scatter with rosemary, cooked garlic and sea salt flakes and bake for 25-30 minutes
