Sugar & Spices Palmiers

 


2 sheets of store-bought puff pastry
Sugar & Spices
1 cup (200g) granulated sugar
2 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cardamom

1. mix together the sugar with the spices

2. lay out a sheet of parchment paper. Sprinkle generously with sugar mixture. Lay one sheet of puff pastry on sugared parchment paper. Sprinkle with more sugar mixture, lay second sheet of puff pastry and top with sugar mixture

3. using a rolling pin, gently roll out puff pastry to integrate the sugar into the dough

4. roll long side of puff pastry tightly up to the middle of the rectangle. Repeat with other side. Wrap in same parchment paper you have been using for preparation and then wrap in plastic foil. Place in freezer for 10-15 minutes

5. heat oven to 400°F (200°C). Unwrap dough roll, cut in aprox. 3/4" pieces and lay them flat  in a parchment paper lined baking tray. Sprinkle with some sugar mixture. Bake for 10-15 minutes. They should have browned and caramelized nicely

Store in an airtight container
