Candied Pecans
1/2 cup (65g) granulated sugar
1/2 cup (100g) packed soft light brown sugar
1 tablespoon cinnamon powder
1 teaspoon salt
1/8 teaspoon ground cayenne
12 ounces (340g) raw pecans halves
1 egg white, whisked
1. heat oven to 300°F (150°C) and line a baking sheet with parchment paper
2. mix sugars, cinnamon, salt and cayenne together
3. toss pecans in a bowl, add egg white and mix until evenly coated. Add sugar mixture and gently toss to coat evenly
4. spread pecans in a single layer on prepared baking sheet. Bake for 20 minutes, give them a brief stir and continue baking for 20 more minutes or until fragrant and the sugar coating is cooked through. Remove from oven and allow to cool. Sugar coating will harden once pecans have cooled
Store pecans in an air tight container for up to two weeks
