Three Hour Bread baked in a Cocotte
3 cups flour Use any kind of flour on its own or mixed
1 1/2 cups water, lukewarm
2 teaspoons salt
1 teaspoon dry yeast
1. mix flour, salt and yeast together. Slowly add the water, and mix very well using a wooden spoon. The mixture will be wet and sticky
2. cover, and let rise for 3 hours
3. dust parchment paper with flour, drop dough on it, and with the help of a scraper, move the dough around until its covered by the flour
4. place the paper with the dough on it in a Cocotte. Dust with flour, and make a slit across the dough. Cover and bake for 30 minutes at 400°
5. uncover, return to oven, and bake for 30 minutes
